I start by butterflying a boneless breast, opened up on a piece of plastic (I use a gallon baggie split open), and covered with another piece of plastic bag.
Pound the hell out of it, till very thin, about 1/4- 1/2 inch or so. spread your favorite stuffing over about 2/3rds of the flattened breast, I use a basic bread/onion stuffing, and roll it up as tight as you can.
Now wrap this carefully with bacon, and wrap the whole thing in aluminum foil, twisting the ends tight. Depending on how many you made bring a pot of water to a boil, and drop your aluminum packets in. Bring back just to a boil and turn down to just simmering, for about 25-30 minutes. Let cool, and refrigerate.
About 30 minutes before you're ready to eat, heat a frying pan, with just a little oil, I use bacon drippings left over from a recent breakfast. Unwrap your chicken roll ups, and brown them thoroughly all around. Everything is already cooked from the water bath, this is just to heat through and brown the bacon.
I usually have wide egg noodles and green beans with this.
I also make a sauce by heating a can of jellied cranberry sauce, and chili sauce to taste, along with whatever spices I feel like using at the time.
